Cook bacon in a skillet over a medium heat until desired crispness is achieved. Remove from pan, drain on a paper towel. Allow to cool. Crumble into pieces. Reserve 2 strips worth for salad dressing.
Combine remaining bacon crumbles with the first six ingredients in a large bowl.
In a small bowl, whisk together the honey, vinegar, oil, mustard, lemon juice, and remaining bacon crumbles.
Pour over salad.
